Crispy Marshmallow Bites

Happy Halloween!  Even though I’m not a huge fan of Halloween a lot of my friends really get into the spirit of the season and enthusiasm can be infectious. Though rather than dressing up or covering myself in theatrical make-up, I thought I’d celebrate with food. My contribution to Halloween is 4 batches of Crispy Marshmallow Bites – with lots of added colour.

Yes, they’re high in sugar. Yes, they’ve got butter in them. Yes, I went a little heavy on the food colouring. But frankly if there’s a time of year to get away with doing that then this must be it!

If you get a lot of trick or treaters coming to your door you could pop some of these into little treat bags for them and I’m sure they’d be much appreciated. I tend to hide at the back of the house on Halloween (too many tricks in years past) so these were made for our colleagues instead. Michael took some to his office and I took the rest to mine – though I couldn’t help myself from hiding a few at home for just the two of us.

Of course, you don’t need to go all out on colour with these. You could just make the basic recipe and enjoy them as they come – they’re still just as delicious. I just happened to get a little carried away as I was home on my own last night and needed something to do…

Decoration Tips:

These crispy marshmallow bites are delicious even if you stick to the basic recipe, but they’re also a great canvas for a bit of decoration.

As mentioned above, adding a few drops of food colouring to the melted marshmallow mixture just before you tip in the Rice Krispies is a great way of adding a splash of colour. You could also add some larger marshmallow pieces, chunks of chocolate or other soft sweets when you add in the Rice Krispies – just make sure they’re well distributed.

I prefer to top them with a decoration after the mixture is in the tray – mostly because it looks better and means that there aren’t any “filling-busting” surprises in the middle.

If you’re choose to go for any sprinkle-type decorations (like hundreds and thousands, edible glitter, etc.) then you want to put those on whilst the mixture is still warm and sticky. This guarantees that they’ll stay in place when you cut the slab into small bites later on.

If you want to drizzle them with chocolate (or go the whole hog and dip them into chocolate instead) then you want them to be totally cool so that it doesn’t melt with the residual heat. You could also add even more decoration to the melted chocolate if you’re a “maximalist”.

Sweet, sticky, crunchy and delicious... These crispy marshmallow bites are made with three simple ingredients and are a guaranteed crowd pleaser. They're also the perfect canvas on which to let your imagination run wild!

Ingredients

for the Crispy Marshmallow Squares

  • 45 g Unsalted Butter
  • 300 g Small Marshmallows (or large ones cut into small chunks)
  • 200 g Rice Krispies or similar puffed rice cereal

for the Decoration

  • Chocolate
  • Edible Glitter
  • Food Colouring

Instructions

  • Lightly grease a 20cm x 30cm roasting tray and line the base with baking parchment - this mixture can be sticky, so you want to make sure you'll be able to turn it out later.
  • Melt the butter in a heavy pan over a low heat. Add in the marshmallows and stir constantly until they have completely melted. Make sure to not let the mixture catch on the base of the pan.
  • If you're adding food colouring to the mixture, now is the time - add a few drops at a time, stirring well between each addition, until the marshmallow is as lurid as you want it to be.
  • Add the Rice Krispies to the pan and stir quickly until they're completed coated in the mixture. Tip it into the greased tray and spread out evenly with your fingers or a spatula, making sure to press it into the corners.
  • Allow them to cool completely, either in a cool place or in the fridge. When they're completely cold, cut them into individual chunks. Remember, you can make these as big or as small as you like...
