Lemony Dijon Chicken
Zesty and creamy with the added warmth from the dijon mustard - this is a simple weeknight dinner that brings plenty of flavour for very little effort.

- 1 tbsp Olive Oil
- 2 Skinless and Boneless Chicken Breasts
- 1 clove Garlic, crushed
- 30 ml White Wine
- 50 ml Crème Fraîche
- 1 tbsp Dijon Mustard
- 1 Lemon, juiced
Heat a skillet or frying pan over a medium-high heat then add the oil. Season both sides of chicken with salt and pepper then add to the pan. Turn occasionally until golden on both sides and cooked through. Remove the chicken from the pan and transfer to a plate.
Add a splash more oil if needed, followed by the garlic - cook for 30 seconds then add the wine and deglaze the pan. Once it's at a simmer add the crème fraiche, dijon mustard and lemon juice. Bring to a simmer and allow to thicken.
Return the chicken to the pan and coat with the sauce before serving over mashed potatoes, with some steamed green vegetables on the side.
