This really is a quick crowd-pleaser that requires next to no effort or preparation. Pre-cooked chicken, pre-made pastry and pesto from a jar. All you really need to do it chop up a few things and pop it in the oven for 25 minutes.
The good news is that nobody would really know how easy it was for you – as the end result is a gloriously golden, bubbling tart packed with flavour. Party food at its best.
Chicken Pesto Puff Pastry Tart
- 1 Sheet of Pre-Rolled Puff Pastry
- 2 Free-range Chicken Breasts (about 150g each), cooked and cut into 1cm chunks
- 4 tbsp Good Quality Pesto (or make your own)
- 125 g Mozzarella, sliced
- 40 g Parmesan Cheese, grated
Pre-heat the oven to 180°C
Lay the pre-rolled puff pastry out onto a baking sheet. Prick all over with a fork to save the base from puffing up too much when cooked.
In a separate bowl mix together the cooked chicken and pesto, before spreading it across the puff pastry. Go as close to the edges as you can but do leave a small border to give a crispy edge.
Top with the sliced mozzarella and grated parmesan cheese before putting into the oven. Cook for 25 minutes, until the pastry is golden around the edges and the cheese has melted and browned.
Remove from the oven and allow to cool for a few minutes before cutting into slices and serving whilst still warm.
