When you have friends round for a casual supper you don’t always want to be stuck in the kitchen preparing food. A big, tasty pasta bake is a great way to get ahead of the game and ensure that you spent time with your guests instead. This one is a guaranteed winner – combining the richness of three cheeses with the saltiness of ham and warmth from the pesto.
Combining the rich flavours of basil in the pesto with the saltiness of ham, this pasta bake is a crowd pleaser than can be made in next to no time.
- 300 g Pasta Shapes of your choice
- 250 g Ricotta Cheese
- 100 g Mascarpone Cheese
- 50 g Good Quality Pesto
- 200 ml Good Quality Chicken Stock
- 50 g Parmesan Cheese grated
- 200 g Baby Spinach washed and drained
- 200 g Shredded Ham Hock (or Cubed Cooked Ham)
Preheat the oven to 180°C
Cook the pasta for 2-3 minutes less than shown on the pack - you want it to be almost cooked but very al dente.
Mix together the the ricotta, mascarpone and pesto in a large bowl. Slowly add in the chicken stock continuing to stir until you have a smooth sauce. Add in half of the parmesan cheese.
Shred the spinach and then stir it through the mixture, followed by the ham making sure everything is well mixed.
Add in the pasta and stir well, making sure everything is well coated. Transfer the mixture to a large ovenproof dish and sprinke over the remaining parmesan.
Put into the oven and bake for 25-30 minutes until bubbling and golden brown.
Remove from the oven and allow to stand for 5 minutes before serving.
