Harissa Honey Sauce
This is based on a sauce from Nigella Express by Nigella Lawson, that she serves with prawns. I find the mixture of ingredients in her recipe a bit too powerful for most people, so have tweaked it here to provide a more gentle heat and what I consider to be more pleasing flavour.

- 100 g Good Quality Mayonnaise
- 1 tbsp Harissa Paste
- 1 tbsp Clear Runny Honey
- 1 tbsp Lemon Juice
Mix all of the ingredients together in a small bowl, then cover and chill for a few hours to allow the flavours to develop. Remove from the fridge a bit before serving and allow it to come up to room temperature.
